I just did one of these on my offset smoker. Instead of rub I used a coat of cheap yellow mustard and kosher salt and cracked pepper. All apple wood smoke. Pulled it off when I ran through the bag of charcoal and finished in the oven with the Texas cheat. Pretty tasty. I would try the SV version if I had the gear.

Pro tip you can also use ping pong balls poured on top or wine corks if your a wino to prevent evaporation on a budget but also just check amazon for lids you can sometimes find em for like 10-15 bucks pretty worthwhile if you do a lot long Sous vide cooks

I tried the sous vide version minus the liquid smoke. Fantastic result, easy to prepare and impress at a gathering. One extra step I added that made all the difference was to salt the pork juice and add a bit to the pulled pork. Pushed the flavor to the max and kept it juicy 🤤

Best means of making pulled pork inside is, in fact, NOT making pulled pork. It's making /kalua/ pork in an instant pot. Pork shoulder, with or without bone, into an instant pot set on Sautee with a bit of oil. Sear to get some fond going, remove the pork (i suggest two grilling forks), deglaze the pot with a cup of water and 2 tsp of liquid smoke, scrape the fond off the bottom,, add a trivet, then salt (and optionally pepper) the pork before returning it to the pot, sealing, and setting to cook on high pressure for 90 minutes, natural release for 10 minutes followed by a quick release.

Wont the sugars burn in the smoker at that temperature for that long? Okay, I answered my own question. No, sugar doesn't burn at that temperature. Also, since I asked that, I have started and finished making one of these. The rub was excellent. I really want to try it on brisket now. 6 hours in the smoke and 4 hours wrapped in the oven produced a butt that was almost like pork jello. The fat was almost liquefied. So moist. Falling apart tender.. I'm going to get a lot of use out of this technique, as our local supermarket chain has them for $0.69 a pound right now and we have five more in the freezer.

That was great!! I substituted the rub with salt and pepper, pineapple juice and coconut. I substituted the sauce with cumin, cilantro and chili powder. I substituted pork for ground beef, and did not used a Sous-vide or a smoker. Instead I browned the meat for 3 1/2 minutes. I also used Corn Tortillas and added Pickled jalapeños. DE-LI—CIOUS! Best Pulled pork I’ve ever made!!
