Sorry, but if you’re cooking a pork butt low and slow, there shouldn’t be a knife anywhere near it. If it’s cooked properly (and by cooked I mean smoked over charcoal and apple wood) then rested all you need is 2 dinner forks to shred that meat into pulled pork. Real pork butt (or pork neck is even tastier) ain’t cooked inside in an oven, it’s dry rubbed then smoked outside on your smoker of choice.
